Delicious Chicken Caesar Salad Recipe for Less Than 300 Calories
Food writer and 5:2 advocate Kate Harrison shares some of her favourite low-calorie recipes to help you kick off a healthy 2017.
•100g skinless chicken breast
•Small slice wholewheat bread, cut into cubes
•4 spears of asparagus
•½ cos lettuce, cut in half widthways and leaves separated
•¼ cucumber, cut into batons
•1 medium celery stick, cut into batons
•100g finely grated Parmesan
•1 tbsp low-fat natural yogurt
•1 tsp white wine vinegar
•1 tsp wholegrain mustard
Preheat the grill to medium. Thickly slice the chicken, place on a baking sheet and season. Grill for 10–12 minutes, or until golden then turn over and cook the other side. Cut one of the thicker slices in half to check it’s cooked. There should be no pink juices or fleshy parts inside. Place the chicken in a large bowl.
Add the bread cubes to the baking sheet and grill until golden on both sides then add to the chicken in the bowl.
Slice the asparagus from top to tail along the stalks, or use a vegetable peeler to create shavings. Put in the bowl with the chicken and bread then add the lettuce, cucumber and celery.
Mix together the Parmesan, yogurt, vinegar and mustard and season with black pepper. Drizzle the dressing over the salad to serve.
